Delicious, melt-in-your-mouth tender beef shortrib tacos that will give your Taco Tuesday an tasty lift.
Ingredients
4 beef shortrib steaks (boned, about 5-6 oz each)
3 limes
1 tsp sea salt
1 tsp seasoning (I use Tajin Classico Seasoning)
2 tsp baking soda for velveting*
2 tsp Peanut oil
1 medium onion
1 bell pepper
2 sliced pickled jalapenos
1 med tomato
2 avocados
Sour cream or AVOCADO CREAM (recipe below)
8 corn taco sized tortillas
*Velveting- Baking soda raises the pH level on the surface of the meat, making it more difficult for the proteins to bond and therefore keeping the meat tender and moist. Mix the baking soda and a cup and a half of water together. Toss the sliced beef with the baking soda. Cover and refrigerate for 30 minutes (no longer). Rinse thoroughly with cold water. Marinade as per recipe.
Marinade Directions
Place fillets in sealable containers. Squeeze juice of one lime onto the fillets. Sprinkle Tajin Seasoning evenly over both sides. Return to fridge for 1-2 hours.
Cook down peppers and onions.
Pan Fried Steak– Heat large non-stick pan to medium-high heat add 1 tablespoon of peanut oil. Place the four fillets in heated pan with spacing. Cook for four minutes on each side at most. Remove and let sit for five minutes before slicing to serve.
AVOCADO CREAM
This should be done just before serving. A light alternative to guacamole.
Ingredients
1/2 cup sour cream
1 ripe avocado (peeled, pitted, roughly chopped)
1/2 lemon or lime (juiced)
Kosher salt, pepper (to taste)
a dash of hot sauce, if you like
Directions
In the blender or food processor, add the sour cream, avocado, lemon juice and season with salt, pepper and hot sauce. Blend until smooth.
For the Charred Tortillas: 8 small white corn tortillas (griddled on stove or grill to serve, 5-inch) Place the tortillas on the grill and allow to cook until lightly charred and warmed through. You can also you blue corn tortillas or the ones leftover from that kit you bought.
To Serve: Place a warm tortilla down, top with a piece of fish with Salsa and a drizzle of avocado cream. Repeat and serve! Of course you can add peppers, tomatoes and greens to you hearts desire. Garnish with you last lime.
